Breakfast recipes you can make in your blender

Using a blender with all your meals can really simplify cooking and as breakfast can sometimes be a bit boring, we have some new and exciting recipes for you to try with your blender. These recipes are perfect if guests stay over or if you just want to mix up your weekend breakfast.

Carrot, Walnut and Raisin Muffins

What you will need

  • 265 g self-rising flour
  • ½ teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • 80 g raisins
  • 60g walnuts
  • 90 g carrots, halved
  • 2 large eggs
  • 150 g granulated sugar
  • 100 ml coconut oil
  • 30 ml milk

Directions

  1. Preheat the oven to 180 °C and line a muffin tin with cupcake papers
  2. Place carrots in a blender until finely chopped and then add eggs, sugar, coconut oil and walnuts. Blend this for around 30 seconds. The mixture should combine into a thick consistency. Set aside.
  3. Sieve flour, baking powder and cinnamon together into a mixing bowl.
  4. Add the raisins
  5. Add the mixture from the blender to the mixing bowl.
  6. Fold both mixtures together
  7. Add the milk and fold again
  8. Spoon mixture into muffin tin and bake for 25 minutes or until golden brown.
  9. These muffins also act as great snacks throughout the day or lunchbox additions.

Healthy Chocolate Pancakes

What you will need

  • 400 ml sweetened almond milk
  • 2 eggs
  • ½ avocado, pitted, peeled
  • ½ teaspoon baking powder
  • 100g dark chocolate chips
  • 2 Tablespoons cacao powder
  • 1 Tablespoon date syrup
  • 1 Tablespoon agave nectar
  • 150 g gluten-free flour or regular flour
  • 2 Tablespoons coconut oil

Directions

  1. Add the almond milk, eggs, avocado, baking powder, cacao powder, flour, agave syrup, date syrup and 1 tablespoon of coconut oil to your blender.
  2. Blend until smooth but try not to over blend
  3. Add chocolate chips and fold in
  4. Add the last tablespoon of coconut oil to a hot pan
  5. Spoon 3 tablespoons of the mixture into the pan and spread out (the mixture will be thick)
  6. Cook until mixture is no longer soft.
  7. Enjoy with honey or almond butter.

Chia Seed Porridge

This one is a great twist on a classic breakfast dish.

What you will need

  • 250 ml almond milk
  • 50 ml coconut milk
  • 2 tablespoons of chia seeds
  • 5 dates pitted
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract or honey
  • Strawberries and raspberries to garnish

Directions

  1. With chia seeds, you need to soak them in milk the night before
  2. Place almond and coconut milk in a blending jug with chia seeds, dates, cinnamon and vanilla extract. Make sure to add them in this order
  3. Blend all ingredients together, the mixture should be runny and smooth
  4. Cover and put in the refrigerator overnight
  5. The next morning add any additional fruit, we love using strawberries and raspberries

Scrambled eggs

Whip up your eggs in the blender and create the fluffiest scrambled eggs ever. Your blender will evenly combine the whites as well as adding extra air into the mixture which creates a light texture.

What you will need

  • 2 eggs
  • 100 ml single cream
  • 1 knob of butter
  • As much salt and pepper as you like

Directions

  1. Blend eggs, cream and pinch of salt together for 25 seconds
  2. Add a knob of butter to medium heated pan (make sure the butter doesn’t burn)
  3. Pour the egg mixture into the pan and let it sit for around 25-30 seconds
  4. Stir with a wooden spoon continuously until eggs are silky.
  5. Add pepper and serve immediately.
